Potato Bean (Apios Americana)

This rapid growing climber is like a bean, but actually is closer to the ground nut, or peanut. It is a lot hardier and can grow here in the UK

The plant has edible tubers, which grow a bit like potatoes. They can be roasted in the ashes of a fire and are tasty and nutritious. they were widely eaten by indigenous North American's and can be dried and stored as powder which is iused to thicken soups and stews.
